Taylor Swift/Debut Era (2006-2009):

Ah, the era that started it all! Taylor Swift's debut album brings back memories of innocence and sweet melodies. To match, we present our Wagyu Beef Rump 6+, peppercorn jus & chives. The jus that finishes this dish brings to mind that Southern/Country love of gravy. The dish itself has a country flare, just like Taylor did during this era.

Fearless Era (2009-2010):

With "Fearless," Taylor took us on a journey of love and heartbreak. Our dish for this era is the Marinated Tomato & Glazed Zucchini Salad, green olives, feta & crispy eshallot. This dish has a connection to Fearless with its country connection but a little bit more mature and put together. This dish is a take on a classic but with a modern twist, very much like the Fearless era.

Speak Now Era (2010-2012):

In this era, Taylor embraced her storytelling prowess and took charge of her narrative. We pair this with our  Plant Based (Vegan) Grazing Table. The colour scheme of this grazing table Speaks for itself, perfectly matching Taylor’s purple gown from the album cover.

Red Era (2012-2014):

With "Red," Taylor explored the depths of love and loss. Our dish for this era is the Burrata, marinated perino tomatoes, pesto, vincotto & olive crumb. The bright red of the tomatoes matches the title of the album and Taylors signature red lip.

1989 Era (2014-2017):

Taylor Swift embraced pop music with "1989," bringing us catchy tunes and dance-worthy beats. Our dish for this era is the Braised Lamb Tartlet, shaved slaw, pomegranate, kale crisps & chilli jam. This dish was chosen for its bright colours and contemporary presentation, just like the album, this dish was made to be fun!

Reputation Era (2017-2018):

In her "Reputation" era, Taylor showed us her fierce side and reclaimed her narrative. Our dish for this era is our Marinated Lamb Backstrap, miso eggplant, triple cooked potato, glazed greens & crispy chickpeas. This dish is more complex and has multiple components, just like the Reputation album.

Lover Era (2018-2020):

With "Lover," Taylor celebrated love in all its forms. Our dish for this era is our Deconstructed Berry Cheesecake, caramelised apple, meringue, berries, toasted walnut + coconut granola. We feel the sweetness and delicate nature of this dish matches the essence of the Lover album.

Folklore Era (2020-2022):

In the midst of a global pandemic, Taylor Swift surprised us all with the intimate and introspective "Folklore." Our dish for this era is the Portuguese Charred Chicken, basil pesto & carrot tops with Triple Cooked Potatoes, garlic & burnt rosemary salt. This dish matches the overall vibe of the Folklore album, it’s earthy, grounded, herbaceous and smokey.

Evermore Era (2020-2022):

Continuing the journey of "Folklore," Taylor gifted us with "Evermore," inviting us into a world of enchantment and melancholy. Our dish for this era is Torched Tasmanian Salmon, salsa verde, toasted sesame, dill & radish. We paired these together because Salmon travel upstream through twisty rivers to the peaceful forrest side lakes in spring which connects the forrest and grounded theme of Evermore.

Midnights Era (2022-Present):

As Taylor Swift enters her "Midnights" era, we eagerly await the next chapter of her musical evolution. In the meantime, let's eat with our Black Berry Panna Cotta, brandy snap, medjool date & candied walnuts. This dessert is moody, complex and packs a punch, just like Taylor’s Midnights album.
