Elegant Hunter Valley Catering at Villa Toscana: A Seasonal Menu by The Wilderness Chef

When it comes to crafting a menu, our chefs do not take the task lightly. Every dish is built on a foundation of experience, inspiration from travel, and a deep passion for food. Our menus change with the seasons, not only to make the most of local and fresh produce, but also to give our chefs the space to keep creating and exploring new ideas. The energy and love for food in our kitchen is something we are incredibly proud of.

That was exactly the idea behind this three course individually plated alternate drop menu we created for a beautiful shoot at Villa Toscana. The venue felt like it had been transported straight from Tuscany, so we leaned into that energy and created a menu that matched the setting.

THE MENU

Starter

• Italian Buffalo Burrata, perino tomatoes, basil pesto, pomegranate molasses and local sourdough

Entree

• Torched Salmon, truffle capers, roasted cauliflower, yellow squash, toasted seeds and dill

• Roasted Duck Breast, tomato romesco, lentil ragu, glazed zucchini, shallots and spiced almonds

Main Course

• Moorish Spiced Lamb Rump, charred sweet potato, eggplant caponata, parsley, black olive and Hunter Valley feta

• Crispy Roasted Porchetta, charred broccolini, caramelised fennel, cabbage jam, jus and dukkah

This menu was a celebration of place, and it gave our chefs the chance to create something thoughtful and completely unique to the day. As always, we were lucky to work alongside an amazing team of creatives, all of whom brought their skill, style and love for what they do to the table.
