Curried King Prawn recipe

Juicy, tender and full of bold, warming spice, these curried king prawns are a vibrant twist on a classic. Marinated in a fragrant blend of curry spices, garlic, ginger and lemon, then quickly cooked to lock in flavour, they’re versatile and crowd-pleasing. Perfect served on skewers, wrapped in flatbread, or spooned over rice, every bite is a balance of heat, richness and zing that makes them impossible to resist.

Ingredients:

  • 500g raw king prawns, peeled and deveined

  • 2 tablespoons vegetable oil

  • 1 medium onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tablespoon fresh ginger, grated

  • 1 tablespoon curry powder

  • 1 teaspoon ground turmeric

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 1/2 teaspoon chilli flakes (optional)

  • 400ml coconut milk

  • Juice of 1 lime

  • Salt and pepper to taste

  • Fresh coriander leaves, chopped (for garnish)

Instructions:

  1. Sauté Aromatics: Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and sauté until translucent.

  2. Add Garlic and Ginger: Stir in the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.

  3. Spice It Up: Add the curry powder, turmeric, cumin, paprika, and chilli flakes. Cook the spices for 1-2 minutes to release their aromas.

  4. Create the Sauce: Pour in the coconut milk and bring the mixture to a gentle simmer. Let it cook for 5 minutes to allow the flavours to meld.

  5. Cook the Prawns: Add the king prawns to the pan, cooking for 3-4 minutes until they turn pink and are cooked through.

  6. Finish with Lime: Squeeze in the lime juice and season with salt and pepper to taste.

  7. Garnish and Serve: Garnish with chopped fresh coriander leaves before serving.
