Easy Lamb Meatballs Recipe – Juicy, Flavourful & Ready in 30 Minutes

Juicy Lamb Meatballs

A deliciously spiced meatball recipe made with Australian lamb, perfect for meal prep, shared feasts, or a quick weeknight dinner.

Serves 4 | Makes approx. 16 meatballs

Ingredients

  • 500 g lamb mince

  • 1 small brown onion, grated

  • 1 garlic clove, finely chopped

  • 1 egg, lightly beaten

  • ¼ cup fresh breadcrumbs

  • Zest of ½ lemon

  • 1 tsp ground cumin

  • ½ tsp ground coriander

  • ½ tsp smoked paprika

  • 2 tbsp chopped parsley or mint

  • Salt and black pepper, to taste

  • 1 tbsp olive oil, for cooking

Method

  1. Prepare the mixture
In a large bowl, combine the lamb mince, onion, garlic, egg, breadcrumbs, lemon zest, spices, herbs, salt, and pepper. Mix gently with clean hands until just combined — avoid over-mixing to keep the meatballs tender.

  2. Shape the meatballs
Roll the mixture into balls roughly the size of a walnut. You should get about 16.

  3. Cook
Heat olive oil in a large frying pan over medium heat. Add meatballs in batches and cook for 8–10 minutes, turning occasionally, until browned on all sides and cooked through.

  4. Serve
Enjoy them hot with your favourite sauce, stuffed in wraps, over couscous, or tossed into a salad.

Tips

  • For a firmer texture, chill the meatballs for 20 minutes before cooking.

  • Great with Greek yoghurt, a squeeze of lemon, or a drizzle of tahini.
