A Romantic Rainy Day Wedding for Candice & Max

On the 19th of May 2025, we had the joy of catering for Candice and Max’s beautiful wedding at The Ambers, a stunning Airbnb nestled in the heart of Port Stephens. This venue is as dreamy as they come, surrounded by nature and filled with charm, making it the perfect place for such a special celebration.

Although the weather didn’t quite cooperate, with heavy rain falling for most of the day, Candice and Max never let it dampen their spirits. Instead, they embraced the mood, and in between showers, their photographer captured breathtakingly romantic moments. The soft light and moody skies added an unforgettable atmosphere that made their photos truly one of a kind.

One of the highlights of the day was the food. Our chefs worked closely with Candice and Max to design a menu that felt true to their personalities and tastes, creating something both seasonal and memorable for their guests.

Beef Fillet Tataki, puffed sesame crisp, chilli jam, wakame & togarashi 

Miso Torched Salmon, wonton crisp, gribiche, dill & aleppo 

Teriyaki Glazed Chicken Dumpling, miso mayonnaise, spring onion, radish & soy seeds 

Portobello Mushroom Arancini, leek, thyme, parmesan & truffle lemon aioli

Banquet:

Roasted Porchetta, jus, caramelised apple & cranberry chutney 

Moorish Spiced Lamb Rump, zhoug salsa & aleppo

Layered Potato & Creamed Leek Gratin, thyme & pecorino crumb 

Wok Tossed Chinese Broccoli, grilled asparagus, confit garlic, lemon & toasted seeds 

Roasted Beetroot Salad, charred corn, lentils, kale, whipped tahini & spiced almonds

Alongside the food, we also looked after the bar and beverage service. Candice and Max chose two signature cocktails for their guests to enjoy, a Passionfruit Martini and a refreshing Pimm’s Cup, which set the tone for a lively and celebratory evening. This was paired with a regular service of beer, wine, champagne and soft drinks, ensuring there was something for everyone to enjoy throughout the night.

Bury me in the canapés because yum. Every bite was a flavour explosion, and our guests are STILL talking about how incredible everything was. We went with banquet-style dining and added a few extras – absolutely nothing was off limits, and it all came together perfectly.
